Gluten free & Grain free Recipes


Our family followed special diets for many years, including gluten-free, the Specific Carbohydrate Diet and the Perfect Health Diet.  While we no longer need to avoid certain foods, we still enjoy some of these favorite GF recipes.

Old-Fashioned Cornbread

Hearty Muffins

Preheat oven to 375 F.

Blend in mixer:

3 eggs

1/2 cup yogurt

1/2 cup honey (or less)

Add in 2 1/2 cups flour (we use either 1 1/2 cup almond flour and 1 cup white rice flour or all almond flour)

1/2 tsp baking soda

1/8 tsp salt

1/2 cup additions as desired (raisins, blueberries, mashed banana, dark chocolate chips)

and continue mixing

Bake in paper-lined cupcake tins for 15-20 minutes.


Banana Bread

Recipe same as above except add 1 more egg and 2 mashed bananas.  Bake in a well-greased baking dish for 45-50 minutes at 325 F.


Mix 2 eggs and 1 banana in the blender.  Cook batter on well-buttered skillet or griddle as pancakes.


Blend in mixer:

3 eggs

1/4 cup yogurt

2 Tbsp coconut oil

2 Tbsp honey

1 tsp vanilla

Add in 1 cup almond flour (sub part white rice flour if desired)

1/4 tsp salt

1/4 tsp baking soda

Cook waffles in waffle iron.

Light and Fluffy Muffins

Preheat oven to 400 F.

Blend in food processor:

1 generous cup raw cashews

1 Tbsp coconut oil

After the cashews turn into cashew butter, add

2 eggs

2 ripe bananas (not overripe)

1/2 tsp baking soda and

1 tsp apple cider

and blend until creamy.

Bake in paper-lined cupcake tins for 15 minutes (or more).

Marinara or Pizza Sauce

Saute ground beef in skillet until cooked.

Add chopped onions and garlic and saute for 5 minutes.

Add 1 or 2 cans tomato sauce (no sugar or vegetable oil)

1 can diced tomatoes

salt, pepper, and fresh or dried basil and oregano.

Simmer until well-cooked.

Almond milk

Rinse 1/2 cup raw almonds in water.

Add almonds and 2 cups filtered water to blender.

Mix, then strain through cheesecloth into jar.

To add honey or vanilla, rinse almond bits out of blender, and pour strained milk back into blender.  Add honey or vanilla to taste and mix in blender.

This makes a little over two cups of almond milk, enough for one person for two days, which is how long it will last in the very back of the fridge.

The almond meal left in the cheesecloth can be used as almond flour in baking, stored in freezer, or discarded.  It will not last more than 1 day in the fridge.

Any nut milk can be made in this way, but we think almond milk has the mildest flavor.
